Brussels has always done food in layers: heritage on the surface, experimentation underneath, and a lot of flavour in the in-between. The Brussels Sustainable Food Tour was built to celebrate that, through the makers who keep local craft alive, and the ideas that make it future-proof.

The Fermentastic tour is a collaborative project selected under the Go Green, Get Digital, Be Resilient programme of TASTE (Transformative Approaches for Sustainable Food in Tourism), and funded by the European Union. Our mission is to help food tourism evolve into business models that are more sustainable, more digital, and more resilient, without losing the joy (or the flavour).


What we’re here to do

Our mission is simple: help food tourism move forward, without losing what makes it worth traveling for in the first place. We focus on three transformation goals:

1.Green transition

We promote practices that make sense in a city: local sourcing, circular food thinking, and experiences that celebrate craft while keeping waste and footprint low.

2.Sustainainable Walking Tour

A curated walk through Brussels with tastings, stories, and behind-the-scenes context, meeting the people shaping the city’s fermentation scene, one stop at a time.

3.Resilience

We’re strengthening our partners’ ability to adapt—because food, tourism, and cities change fast. We’re building models that can weather shocks and still stay delicious.

Led by Cookwork, the project brings together Brussels-based makers and tourism expertise, each chosen for real craft, strong identity, and a shared commitment to a better food future.
